“Be Inspired” Pork Tailgate Recipe Contest Winner – Texans

The Colts and Indiana Pork have partnered in search of the best pork tailgate recipe in all of Colts Nation, and guess who is in charge of it? Yours truly! We’re going to be searching for the best pork tailgate recipes you have to offer. This week’s  winner is Donna Beck from Bonney Lake, WA. This is not your typical tailgate recipes, but it does sound DELICIOUS! What’s better than pork an apples? Here’s her “Smoky Pork & Almond Burgers w/ Apple & Cherry Chutney.”

Smoky Pork & Almond Burgers w/ Apple & Cherry Chutney

FOR THE BURGERS

2 lbs ground pork
3 Tablespoons smoked almonds, finely chopped
3 1/2 tablespoons buttermilk
6 tablespoons olive oil, divided
2 tablespoons minced fresh sage leaves
2 teaspoons kosher salt
1 1/2 teaspoons smoked paprika
1/2 teaspoon fresh ground black pepper
1 large sweet onion, diced very fine

FOR THE CHUTNEY

2 cups chopped peeled Granny Smith apples (about 2 large apples)
1 cup dried tart cherries
2/3 cup chopped onion
1/2 cup water
1/2 cup red wine
1/3 cup sugar
2 tablespoons white wine vinegar
1 tablespoon grated peeled fresh ginger
1 jalapeño pepper, chopped

6 slices smoked Gouda cheese
3 cups of arugula, clean and dry

6 soft, pretzel rolls, split and toasted

Cooking Directions:

FOR THE CHUTNEY

Combine all ingredients for the chutney in a small, fireproof saucepan; bring to a boil. Cover, reduce heat, and simmer 45 minutes. Uncover; increase heat to medium-high. Cook 15 minutes or until most of liquid evaporates. Allow to cool.

FOR THE BURGERS

While the chutney is simmering (the last 15 minutes), combine all burger ingredients and mix well. Form into six patties, Grill over medium heat until juices run clear and the internal temperature reaches 170*F, about 5-6 minutes each side. Add one slice of smoked Gouda to each burger and allow to soften.

Add arugula to the bottom bun, place hot burgers onto arugula, top with the apple and cherry chutney.

INDIANAPOLIS COLTS MAKE ROSTER MOVES

The Indianapolis Colts today elevated wide receiver Griff Whalen from the practice squad to the active roster and waived cornerback Jalil Brown.

Whalen has played in six games for the Colts this season, catching nine passes for 102 yards. He was originally signed by the Colts as an undrafted free agent on April 30, 2012 and was signed to the practice squad on October 2, 2013. Whalen was elevated to the active roster on October 28 and waived on November 19. He was then signed back to the practice squad on November 21.

Brown was signed by the Colts as a free agent on October 22, 2013. He played in five games this season and made two solo tackles and one special teams stop. For his career, Brown has appeared in 34 games (two starts), totaling 26 tackles (24 solo), two passes defensed, one forced fumble, one fumble recovery and 14 special teams tackles.
