It’s a new Colts football season and that means that it’s tailgating season! Just like last year, the Colts and Indiana Pork have partnered in search of the best pork tailgate recipe in all of Colts Nation, and guess who is in charge of it? Yours truly! We’re going to be searching for the best pork tailgate recipes you have to offer. We want to see some creativity and of course plenty of pork! What something to sweeten the deal? How about a year supply of bacon! Yes, the grand prize winner will receive a year supply of bacon. The weekly winners will receive a prize package consisting of a $50 Meijer gift certificate,101 Things to Do With Bacon Book, Indiana Pork Apron, Colts hat, Colts yearbook and Colts 2013 Season DVD.

This week’s winner comes is Christine with her own take on a tailgate classic. I’ve had many kinds of jalapeno poppers, but the addition of sausage on these takes it to a whole new level!

Spicy Colts Pepper Footballs

20 Jalapenos (tops cut off and de-seeded–use gloves)
1 8oz Cream Cheese (softened)
1 16 oz mild or hot sausage (cooked and drained)
1 Bunch Green onions (tops off and chopped)
1 16 oz bacon
1 Clove Garlic (minced)
Salt
Pepper

Mix cream cheese, crumbled sausage, onions, garlic, and salt and pepper to taste. Stuff Jalapeno’s with mixture and wrap bacon around and over pepper and secure with toothpick. Grill on medium turning over frequently until bacon crisps up and contents are heated through. Remove toothpicks before eating. Enjoy!!!

Thanks for sharing Christine! This would make the perfect pregame snack before Monday Night Football. Think your tailgate recipe is better? Enter it here.

“Be Inspired” Pork Tailgate Recipe Contest Winner – Titans

Posted by coltsindianapolis on November 30, 2013 – 2:22 pm

The Colts and Indiana Pork have partnered in search of the best pork tailgate recipe in all of Colts Nation, and guess who is in charge of it? Yours truly! We’re going to be searching for the best pork tailgate recipes you have to offer. This week’s  winner is Lori Frazee from Dunnellon, FL. This recipe sounds quick, easy and SUPER delicious! Now personally, I’m a BIG advocate for pork burgers. It’s not too common, but it provides a whole new level of juiciness that’s hard to achieve with beef burgers. Here is Lori’s recipe for “I Dig Pig Burgers.”

I Dig Pig Burger
1# ground Pork, seasoned with season salt, pepper and 1/4 cup chipotle salsa, mix through
8 slices pepper jack cheese
4 slices bacon
Divide ground pork into 4 balls, divide the balls in half and place one piece of cheese in the middle and form patty
Wrap bacon around the patty and secure with toothpick
Grill until almost cooked through, top with a little more chipotle salsa and add additional piece of cheese, finish cooking , cheese should be perfect and bacon will add to the smokiness of the Salsa. Serve on a Kaiser roll. The only thing that would add to this , would be top with a boneless rib, Then I’m getting my pork on!!

Lori will receive a prize pack consisting of a $75 Meijer gift certificate, Bacon Nation Cookbook, Indiana Pork Apron, Colts hat, Colts yearbook and Colts 2012 Season DVD. PLUS she will be entered into the grand prize which is the Traeger Lil’ Pig Grill.

This is the GRAND PRIZE!!

The Colts and Indiana Pork have partnered in search of the best pork tailgate recipe in all of Colts Nation, and guess who is in charge of it? Yours truly! We’re going to be searching for the best pork tailgate recipes you have to offer and naming a winner before every home game. This week’s  winner is Kyle Carmichael from Greenwood, Indiana. Kyle’s recipe is a unique approach to an nontraditional tailgating dish. Now this will take some prep work, but there’s nothing wrong with starting the smoking process the day before while you’re watching  college football, then finishing it off on Sunday. This is a great meal to spice up your tailgate as we start to get into the colder months.

Pork Carnitas

8-10 lb bone in Pork Butt
2 Tbsp Salt
1 Tbsp Chili Powder
1 Tbsp Dried Oregeno
1 Tbsp Cumin
1 Tbsp Granulated garlic
1/2 Tbsp Ground Black Pepper
2 tsp Dried Orange Zest

(Injection)
1 12 oz beer (dos equis)
1/4 Cup Orange Juice
1/4 Cup Chicken Broth
Rub Pork thoroughly with the dry rub and then inject with the marinade let sit at room temperature for about 30 minutes.

While pork is sitting prepare smoker with oak. (get to a temperature of 225-235)

Smoke to an internal temperature of 190 (about 12 hours)

Remove from smoker, wrap in foil and let sit for about 30 minutes to redistribute juices.

Once cooled to the touch shred and stuff into warmed corn or flour tortillas
garnish with fresh cilantro and fresh pico de gallo.

Kyle will receive a prize pack consisting of a $75 Meijer gift certificate, Bacon Nation Cook Book, Indiana Pork Apron, Colts hat, Colts yearbook and Colts 2012 Season DVD. PLUS he will be entered into the grand prize which is the Traeger Lil’ Pig Grill.

COLTS FAN CASEY: TEXANS PRE-GAME BLOG

Posted by ColtsCaseyB on December 29, 2012 – 7:24 pm

What’s up Colts Nation!? It’s another bittersweet day for me as this is my final pre-game blog of the regular season.

Sunday’s game will be one of the most memorable and heartwarming experiences of my Colts fandom. Coach Chuck Pagano leading the team in a game for the first time since September 23rd is one of the best presents anyone could ask for during the holiday season. I can’t wait for the moment when he comes out of the tunnel to undoubtedly a standing ovation. That place will be rocking!

However, as is customary I will be venturing out to the tailgating front despite the cold weather for the final time this season. It’s been such a memorable year for Colts Nation in so many ways, and in terms of tailgating it’s been no different.

As I’m sure you’re aware by now, I’m in search of the best tailgate in Colts Nation. Read full details here. But here’s the problem, I need you guys to tell me where to go! I should get things started around 10 AM tomorrow and I WILL be hungry! Think your tailgate has what it takes to win the “Tailgate of the Week” and be entered in the “Tailgate of the Year” contest? Then let me know where to come this week on Twitter and Facebook.

Here’s what you can win! Indianapolis_rgb

Special thanks again to Colts Grille, Honda Generators/Reynolds Farm Equipment, and Hoosier Momma Bloody Mary Mix for making this all possible!

COLTS FAN CASEY: TITANS PRE-GAME BLOG

Posted by ColtsCaseyB on December 8, 2012 – 6:10 pm

What’s up Colts Nation? What a glorious day we have before us tomorrow! The Colts (8-4), yes the 8-4 Colts host the Titans in a divisional game where the horseshoe is looking for victory No. 9 and getting one step closer to the playoffs. I’m very excited for the game tomorrow and can’t wait to hear Lucas Oil Stadium rocking as always!

As far as football is concerned, I have a feeling the offense is going to perform very well this week. It’s the perfect setting for a good offensive game as Luck, Wayne and Co. have been rather impressive at home this year. I also think that T.Y. will continue to impress the league and I wouldn’t be surprised to see him get his fifth 100+ receiving yard game of the season. My fantasy team hopes that as well J

I also look for the defensive front to get after Titans QB Jake Locker as their offensive line has endured some big injuries as of late. It’ll be beneficial for us to get them in third and long situations to allow Mathis, Freeney, and our stable of linebackers to get after the QB.

Now, onto the pre-game festivities as you all well know tailgating that is the only way to start a Colts game-day. There’s a busy day full of tailgating awaiting yours truly tomorrow.

Aside from my continued search for the best tailgate in Colts Nation, I am also going to be visiting the guys from Tailgate 32. These guys are living any football fan’s dream. They’re traveling to all 32 NFL stadiums this season in an RV and throwing their own tailgates at each stop.tailgate32 You MUST check these guys out! Not only their website and some of their webisodes, but their FREE, yes I said FREE tailgate tomorrow taking place in the Blue Crew lot. Full info is available here.

I know it’ll be cold tomorrow, but I should be hitting the lots around 10AM and I WILL be hungry! Think your tailgate has what it takes to win the “Tailgate of the Week” and be entered in the “Tailgate of the Year” promotion? Then let me know where to come this week on Twitter and Facebook.

Special thanks again to Colts Grille, Honda Generators/Reynolds Farm Equipment, and Hoosier Momma Bloody Mary Mix for making this all possible!

So if you’re throwing a tailgate, let me know, and if you’re not, join the guys from Tailgate 32 at their tailgate and show them why Colts Nation is the best place in the entire NFL to tailgate. Join the conversation on Twitter and Facebook.

And as always, GO HORSE!

COLTS FAN CASEY BROWNS PRE-GAME

Posted by ColtsCaseyB on October 20, 2012 – 5:57 pm

What’s up Colts Nation!? We’re less than 24 hours away from the Browns coming into Lucas Oil Stadium. i can’t wait to watch this team bounce back at home and get a W!

I’m sure you’re aware that we’ll be showing we’re #CHUCKSTRONG on game day, but before the game I want to see who is Tailgate Strong. As you saw in the video from the Packers game, the Blue Horsepower Express came out with a pretty impressive showing.

I’m sure that Colts Nation is going to bring it this week. Thanks to some help from Colts Grille, Honda Generators/Reynolds Farm Equipment, and Hoosier Momma Bloody Mary Mix I will be searching for the best Tailgate in all of Colts land. It’s easy to get my attention, simply tweet me or holler at me on Facebook.

The weather should be perfect, so bring your A game to the tailgates and I’ll bring a hungry stomach ready to devour some food. And of course I’ll have some  Hoosier Momma Bloody Mary Mix with me for you to sample!

COLTS FAN CASEY: VIKINGS TAILGATE

Posted by ColtsCaseyB on September 21, 2012 – 11:14 am

What’s up Colts Nation!? What a beautiful day to be a Colts fan. We’re coming off a big win over the Vikings in front of the home crowd and heading into another game at Lucas Oil Stadium in front of our great fans.

I had a great game day this past Sunday! I was able to get down there early and head out to a couple tailgates. I made my first stop at the Terre Haute Colts Bus where they feature a cuisine common in that area of the state known as Sati Babi.

The second stop was at the Colts Disciples tailgate where they know how to party! Their motto is “We do it bigger” and boy do they do it big!

I’m going to be pretty brief with this blog because I want you guys to check out the webisode on Colts.com featuring the tailgate of the week winner.

Do you think the Terre Haute Colts Bus has what it takes to beat the Colts Disciples? There’s only one way to find out… Check out the video here!

Special thanks again to Colts Grille, Honda Generators/Reynolds Farm Equipment, and Hoosier Momma Bloody Mary Mix for making this all possible!
