The Colts and Indiana Pork have partnered in search of the best pork tailgate recipe in all of Colts Nation, and guess who is in charge of it? Yours truly! We’re going to be searching for the best pork tailgate recipes you have to offer. This week, our favorite was from Jake Hehman of Greenwood, Indiana. His smoked pulled pork recipe makes my mouth water just reading it!
Here’s his recipe:
“I start off with a 12-16 lbs. pork shoulder ( Boston butt )
I inject it with a mixture of apple Juice, pineapple juice, and Worcestershire sauce-
I only ever use a dry rub and gently rub a mixture, however, I do use a mixture of mustard with a Dab of hot sauce for the dry rub to stick to— dry rub consist of salt, pepper, brown sugar, and crushed red peppers-
After allowing it to sit overnight — I get the smoker set to 225-235 degrees F- and in the meantime allow the pork to sit at room temp before I start the smoking process- smoke it low and slow to my desired temp– and then let it rest before shredding it apart-
Final product is a sweet and heat pulled pork- with some coleslaw all nestled between a Hawaiian roll- no need for BBQ sauce with this guy!”
